Feeling Frisky?

With names like French Kiss, Beavertail, and the Naked Cowboy, it’s not hard to understand why oysters are infamous aphrodisiacs.  (All real names, ps.)   And good news, we’re at the height of the season.  I asked Chef Seth Nathan of Shelter Island’s Isola for the recipe for his Roasted Greenport Company Oysters.  Easy to recreate at home, and the perfect way to impress your guests.

These local woodfired oysters are stuffed with chive-garlic aioli, Moroccan preserved lemons, and panko breadcrumbs.  Then garnished with late season Pea Tendrils for service.  

 “We prepare the oysters and then broil them in our wood fired oven for three minutes.  There is nothing better than fresh local oysters and seafood, and we take full advantage of all that is available to us here on the East End.” Chef Seth Nathan

Enjoy with a glass of buttery chardonnay, either at their cozy bar, or on the outdoor deck where you can sit and people watch in Shelter Island’s beautiful Historic district.  This is one dish that’s worth the trip.
